Bang Bang Chicken Power Bowl

A high protein power bowl loaded with seasoned chicken, crisp cucumber cabbage slaw, Kaizen Rice, and a creamy, spicy bang bang sauce. Perfect for a flavorful, healthy meal prep.
1 lb boneless, skinless chicken thighs, finely diced
1/2 tsp avocado oil
1 tbsp soy sauce
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp smoked paprika
Juice of 1/2 large lime
1/2 tbsp powdered monk fruit sweetener
Salt and black pepper, to taste
1 tbsp gluten-free flour or cornstarch (optional)
1/4 head cabbage, thinly shredded
3–4 Persian cucumbers, thinly sliced
1 carrot, thinly shredded
3 scallions, finely sliced
1 jalapeño, thinly sliced
1 large handful fresh cilantro, roughly chopped
1 tbsp sesame oil
3 tbsp rice vinegar
2 tbsp tamari or soy sauce
1 tbsp toasted sesame seeds
Salt and black pepper, to taste
3 tbsp mayonnaise
2 tbsp sriracha
1 1/2 tbsp unsweetened ketchup
Juice of 1/2 lime
1/4 tsp cayenne pepper
1/2 tsp powdered monk fruit sweetener
2 tbsp water, optional for thinning
4 servings Kaizen Rice

Sesame seeds
Finely dice the chicken thighs and add them to a bowl. Drizzle with avocado oil and soy sauce, then season with salt, pepper, garlic powder, onion powder, smoked paprika, lime juice, and monk fruit sweetener. Add gluten-free flour or cornstarch, if desired. Mix well, then bake at 400°F for 32 minutes or air-fry at 400°F for 22 minutes.
Prepare the Kaizen Rice according to the package instructions.
To make the cucumber cabbage slaw, combine the shredded cabbage, cucumbers, carrot, scallions, jalapeño, and cilantro in a bowl. Add the sesame oil, rice vinegar, tamari or soy sauce, salt, and pepper. Mix well, taste, and adjust the seasonings as needed. Stir in the toasted sesame seeds for added crunch.
To make the creamy Bang Bang Sauce, combine the mayonnaise, sriracha, unsweetened ketchup, lime juice, cayenne pepper, and monk fruit sweetener. Mix well and add water to thin the sauce, if desired.
Divide the Kaizen Rice among four bowls. Top each serving with 4 ounces of cooked chicken, 1 cup of slaw, and a drizzle of Bang Bang Sauce. Garnish with fresh cilantro and sesame seeds.
