Chicken Piccata Meatballs

Ingredients

    • 1 lb ground chicken

    • 1 small yellow onion, finely diced

    • 1/2 cup grated parmesan

    • 1 large egg

    • 1/3 cup almond flour

    • 2 tbsp chopped capers

    • Zest of 1 lemon

    • 3 garlic cloves, minced

    • 1 tsp dried oregano

    • 1/3 cup chopped fresh parsley

    • Salt & pepper

    • Cooking spray

    • 2 servings Kaizen protein pasta

    • 1 tsp extra-virgin olive oil

    • 1/2 small red onion, diced

    • 2 garlic cloves, minced

    • 1/2 cup chicken bone broth

    • Juice of 1 lemon

    • 1 tbsp capers

    • Pinch red chili flakes, optional

    • 2 tbsp nonfat plain Greek yogurt

    • 1 tbsp unsalted butter

    • 2 tbsp chopped fresh parsley

    Directions

    1. Preheat oven to 400°F and line a baking sheet with parchment paper.

    2. In a large bowl, mix together the ground chicken, onion, parmesan, egg, almond flour, capers, lemon zest, garlic, oregano, parsley, salt, and pepper. Gently combine.

    3. Shape into 1-inch meatballs. You should get about 25. Place on the baking sheet, lightly spray the tops, and bake for 20-22 mins until cooked through and golden.

    4. While they bake, bring a pot of salted water to a boil and cook the Kaizen protein pasta according to package instructions. Drain and rinse well.

    5. In a large skillet, heat the olive oil over medium. Add the red onion and cook 5-6 mins until tender, and add the garlic.

    6. Deglaze with chicken bone broth, scraping up any browned bits. Add lemon juice, capers, and chili flakes. Reduce heat to low and simmer for 5 minutes.

    7. Remove from heat and stir in the yogurt, butter, and parsley.

    8. Add a serving of pasta, top with 5 meatballs, spoon over half the sauce, top with parmesan, parsley & enjoy! Save remaining meatballs for later!
