Easy Stuffed Pepper Soup

This is such an easy soup recipe, super filling, packs a ton of protein, and it’s so good. And the best part? It’s all done in one pot without stuffing a single pepper!

Ingredients

  • 1 tsp olive oil
  • 2lbs lean ground beef
  • 1 medium yellow onion, finely diced
  • 3 bell peppers, diced (I’d do red, yellow, and green)
  • 1 red onion
  • 5 garlic cloves, minced
  • 2 tbsp tomato paste
  • Salt & pepper to taste (salt is key!!)
  • 1 tbsp oregano
  • 1 tbsp smoked paprika
  • 1/2 tbsp chili flakes
  • 1 can (28 oz) crushed tomatoes, and 1 can 28oz water
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 cups beef bone broth
  • 1 Parmesan rind, optional but excellent
  • 8oz rice of choice (I used my Kaizen lowcarb rice)
  • ¼ cup shredded cheese
  • 4 tbsp greek yogurt
  • Big handful chopped fresh parsley

Directions

  1. Brown the beef first. Heat a large Dutch oven over medium-high heat. Add the olive oil, diced yellow onion, and cook for 1-2 mins until translucent. Add the ground beef, season with salt and pepper, and cook for 7-9 minutes, breaking it apart.

  2. Build up the flavor Add the red onion and bell peppers and minced garlic, the tomato paste, mix well and cook for 5-6 mins until the veggies somewhat soften.

  3. Season it with the spices, the worcesrhire season, and cook it for another minute or two.

  4. Add the crushed tomatoes, canned tomatoes, broth, and Parmesan rind if using. Pour water into the empty canned tomato and add it to the rest. Bring to a simmer, then reduce the heat and cook uncovered for 15–20 mins.

  5. Add your rice of choice. I used my kaizen high protein lowcarb rice, but use whatever rice you like. If the soup gets thicker than you want, splash in a little additional broth.

  6. Finish it off, remove the Parmesan rind, taste and adjust the salt and pepper. Spoon into big bowls and finish with more shredded cheese, a dollop of of sour cream or yogurt, parsley, and enjoy!
