This High Protein Chipotle Lime Chicken Pasta Salad is creamy, smoky, and packed with fresh flavor. Made with juicy chipotle lime chicken, Kaizen Protein Pasta, crisp vegetables, and a creamy Greek yogurt dressing, it's perfect for meal prep, summer gatherings, or an easy weeknight dinner.

1 lb boneless, skinless chicken thighs
1/2 tsp avocado oil
Juice of 1 lime
1 tbsp chipotle powder (or smoked paprika)
1 tbsp garlic powder
1/2 tbsp onion powder
1 tsp red chili flakes
1 tsp salt
1/2 tsp black pepper
1/2 cup plain Greek yogurt
3 tbsp avocado oil mayo
A handful fresh mint and small handful basil
1/2 jalapeño
Juice of 1 large lime
1 garlic clove
Salt and pepper
2 tbsp water to thin out, as needed
8 oz Kaizen protein pasta or pasta of choice
2 cups romaine, finely chopped
3/4 cup charred corn
4 scallions, thinly sliced
1/2 red onion, finely diced
Extra cilantro for garnish
Optional: jalapeño, cucumber, or feta
Season the chicken thighs with the spices, avocado oil, and lime juice. Mix well, then roast at 400°F for 30-35 minutes until cooked through. Let cool slightly, then dice into bite-sized pieces.
For the dressing, combine all ingredients in a small food processor and blend until smooth and creamy. Thin out with a splash of water if desired.
Cook the pasta according to package directions, then drain and rinse under cold water.
Char the corn in a dry skillet over medium-high heat for 3-4 minutes until lightly browned (or use fire-roasted canned/frozen corn).
Prep the romaine, red onion, scallions, and jalapeño/cucumber if using.
In a large bowl or jar, combine the cooked Kaizen Pasta, diced chicken, romaine, scallions, charred corn, and a handful of fresh cilantro.
Pour the dressing over and toss until everything is evenly coated.
Top with additional feta, cilantro, and extra jalapeño slices if you like a little more heat.
