Creamy, fresh and ready in just 20 minutes, this Edamame Pesto Pasta comes from Carleigh Bodrug’s cookbook, PlantYou: Quickies. Our co-founder, Arash Hashemi, recreated the recipe using Kaizen Ziti for a high protein, high fiber twist.

PlantYou’s Edamame Pesto Pasta Made with Kaizen

Ingredients

  • 2 boxes (8 oz each) Kaizen Ziti

  • 1 cup frozen edamame or green peas, thawed

  • 1½ cups fresh basil or spinach

  • 1 garlic clove, peeled

  • Juice of 1 lemon

  • 1 cup hulled sunflower seeds, hemp hearts, cashews or walnuts

  • ½ cup nutritional yeast

  • 1 teaspoon salt

  • 1 to 2 tablespoons water

Directions

  1. Cook the Kaizen Ziti according to the package directions, reserving 1 cup of the pasta water before draining.

  2. Add the edamame, fresh basil, garlic, lemon juice, your choice of seeds or nuts, nutritional yeast, salt and water to a food processor or high-speed blender. Process until a thick, chunky pesto sauce forms.

  3. Drain the pasta and return it to the pot. Add the edamame pesto and 1 to 2 tablespoons of the reserved pasta water. Toss until the pasta is evenly coated, adding more pasta water as needed to create a creamy sauce.

  4. Serve immediately and enjoy.
