This meal has one of the best flavor combinations, the sauce is incredible, and it’s SO good. This is such a great healthy lunch or healthy dinner option, and you feel so satisfied eating it.

Salmon Avocado Power Bowl

Ingredients

    • 1 lb salmon

    • 1 tbsp dijon mustard

    • 1 tbsp fine garlic powder

    • 1-2 tbsp chile lime seasoning

    • 1 tbsp Aleppo pepper (or crushed chili flakes)

    • 2 tbsp mayo

    • Juice of ½ a large lime

    • 2 tbsp sriracha

    • Pinch of salt

    • Pinch of pepper

    • 2 tbsp rice vinegar

    • 1 box Kaizen rice, cooked according to instructions (or regular rice, brown rice, quinoa, or cauliflower rice)

    • 3 scallions, finely cut

    • 2 Persian cucumbers, finely cut

    • 2 medium avocados

    • 1 jalapeño pepper, finely diced

    Directions

    1. Start with 1 lb salmon. Coat it with the dijon mustard, then season with the garlic powder, chile lime seasoning, and Aleppo pepper. Pop it into the air fryer at 400F for 12-13 minutes. You can also bake this in the oven if you prefer.

    2. While the salmon is going, make the base, sauce, and prep the veggies. For the sauce, mix the mayo, lime juice, sriracha, a pinch of salt, a pinch of pepper, and the rice vinegar. Give it a good mix, taste, then adjust as you wish.

    3. For the base, cook the Kaizen rice according to the box instructions (or sub in regular rice, brown rice, quinoa, or any base you prefer).

    4. For the veggies, finely cut the scallions and Persian cucumbers, and finely dice the jalapeño. Prep the avocados as well.

    5. When the salmon is done, divide it into 4 portions with the base, then top with the veggies and sauce. Enjoy.
